Halloumi Salad with Chermoula, Lentils, Chickpeas & Beetroot

400g can lentils
2 lemons
1 red onion, finely sliced
3tbs olive oil
1 tbs The Spice Republic Chermoula Blend
3 tbs capers, roughly chopped
400g can chickpeas or cannellini beans
250g cooked beetroot, cut into wedges
1 cup parsley or coriander, roughly chopped
250g halloumi, cut into 8 slices

Squeeze the juice from one lemon into a bowl, add onion & mix together with a pinch of salt to pickle slightly. Set to aside. Finely zest & juice the remaining lemon, add to jam jar with olive oil, Chermoula, capers and salt & pepper – shake & set aside. Drain lentils & chickpeas or beans, add to serving plate & toss with dressing. Add beets, herbs, pickled onions & their juice then toss gently. Fry halloumi over medium heat until golden brown, place on top of salad. Serve with crusty bread.

Roasted Broccoli & Macadamia Salad with Chermoula Dressing

Salad:

1 large head of broccoli, florets & thickly sliced stem
2 tbs olive oil
1/4 red cabbage, thinly sliced
3 large handfuls baby spinach
40g sprouts
3 large handfuls toasted macadamia nuts
Salt & pepper

Dressing:

4 Medjool dates, softened in some hot water
2 garlic cloves
1tbs water
2 tbs olive oil
2tbs fresh lemon juice
3 tbs rice wine vinegar
2 tsp Dijon mustard
1 tbs honey
1 tsp Chermoula Blend

Preheat oven to 180 degrees. Place broccoli, olive oil and salt & pepper in a bowl. Using your hands, toss gently to coat evenly. Spread broccoli on a baking tray & roast in the oven for approx. 15-17 mins until starting to char but still crunchy. Remove from the oven & cool. Meanwhile prepare the dressing by soaking the dates in hot water for 10 mins then drain. Place all dressing ingredients in a small food processor & blend until smooth adding water to thin if needed. Pour into a glass jar. Place salad ingredients into a large serving bowl & mix. Dress salad.
